Ingredients:
¼ c extra-virgin olive oil
12 oz. mixed mushrooms, sliced into small bite-sized pieces
1 large sweet onion, chopped into thin slices
2 shallots, chopped into thin slices
Kosher salt
4 garlic cloves, thinly sliced
1/3 c dry white wine
¼ c raw cashews

Tbsp. white or red miso
Freshly ground black pepper
Directions:
Heat oil in oven or pot about medium-high. Arrange mushrooms in one layer to cook for about 3 minutes. Stir and keep cooking until the mushrooms become golden brown. Transfer only the mushrooms to a separate plate. Place onion and shallots to pot and season with salt. Cook and stir until it turns brown for about 9 minutes. Then add garlic and stir for about 3 minutes. Pour the wine and cook for about a minute. Then, add 5 cups of water and place back the mushrooms. Add 2 cups of soup with some mushrooms to a blender as well as cashews and miso. Puree until smooth and stir back into the soup pot. Simmer and stir for 12 minutes. Add salt and pepper for seasoning.
