In case you haven't seen them yet, cauliflower tots are what you get when you mix cooked cauliflower florets with bread crumbs, spices, and other ingredients, then pan-fry them. They're loaded with flavor and make a great side or appetizer dish for any meal — especially chicken and fish dishes.

Roasted Squash Salad with Lemony Tahini Sauce and a Feta

I've been eating a lot more salads lately. I think it's because I have gotten used to making them at home, and I'm getting tired of the same old cold, limp lettuce leaves. So, I went to the grocery store one day and bought some butternut squash, and I cooked it up with some minced garlic and roasted it in the oven. I then chopped up some zucchini and red onion and threw them in there too, with some chopped parsley and a bit of tahini. I paired it with a beautiful salad mix and some feta cheese, and I was ready to eat!

Do you like pesto? We sure do. In fact, we love to use pesto on just about everything we eat. In fact, our most recent recipe is our Spinach Basil Pesto. We have used it as a dip for veggies, spread our sandwiches with it, and even drizzled it over our salads. When I was a kid, my mom used to make her homemade pesto. She would add pine nuts, garlic, and Parmesan cheese. She would then finely chop some fresh basil leaves and add them too. I used to love that pesto so much that I would ask my mom to make it for days when I had pesto cravings.
