Mediterranean-Style Grilled Fish Cakes 

Are you or any family members are into the diet; then this is a perfect main dish to serve. Mediterranean-Style Grilled Fish Cakes are healthy and easy to prepare as well. 

Ingredients 

  • 1 cup tuna flakes
  • 3/4 cup shrimp
  • 3/4 cup bay scallops
  • 1/2 cup bread crumbs
  • 5 sun-dried tomatoes, chopped
  • 4 cloves garlic
  • 1/2 medium onion
  • 1 bunch fresh parsley
  • 6 basil leaves
  • 1 egg
  • 2 fresh hot chile peppers, seeded
  • 4 tablespoons all-purpose flour
  • 4 tablespoons olive oil, divided
  • 1 tablespoon Italian seasoning

In a pan over medium heat, put one tbsp. of olive oil, then fry bay scallops. Stir from time to time until white on all sides. Turn the heat off, drain, and set it aside. Mix tomatoes, onion, garlic, egg as well as one tablespoon olive oil on a food processor or blender. Add basil, parsley, Italian seasoning, and chile peppers.

Pulse on medium until all ingredients are thinly chopped. Put in shrimp, tuna flakes as well as scallops, then pulse on low, gradually putting in bread crumbs. Keep on blending on low until the mixture is sticky and firm. Form mixture into one inch thick patties and put on a plate. Cover and refrigerate for an hour. Lightly dredge patties on flour and a pre-heated BBQ grill over medium heat for two to three minutes per side or until golden brown on both sides.

  • 1 can condense golden mushroom soup 
  • 1/2 cup chopped onion
  • 1/2 cup cream cheese
  • 1/4 cup water
  • 1 tablespoon Worcestershire sauce

Stir together mushroom soup, beef stew meat, onion, cream cheese, and water in a pot. Set it on low heat and cook for another eight hours. When ready, put cream cheese to the mixture prior to serving. Serve with buttered mashed potatoes.

  • 2 pounds thin fish filets
  • Pepper and salt
  • 3 tablespoons butter
  • 2 shallots
  • 1/4 cup white wine
  • 1/4 cup heavy cream
  • 1/4 cup bread crumbs
  • 1 tablespoon chopped fresh parsley,
  • 2 teaspoons dried herbs

Butting your baking dish with 1 tbsp butter and dust with half of the shallots.
Dust the fish with pepper and salt, and then roll up each fillet. Sort out in seam side down in the baking dish. Dust with remaining shallots, herbs as well as bread crumbs, and then pour wine and cream on top. Melt the other tbsp of butter and then drizzle on top.

Bake at 400 F for 20 minutes. Serve hot. This is ideal for six persons.
